tonight's dinner

RICE, CORN AND CHEESE CASSEROLE

3 c. cooked brown or white rice
2 c. corn kernels (1 10 oz. pkg. frozen, thawed or 1 15 oz. can, drained)
1 sm. onion, finely chopped
2 c. (6 oz.) grated sharp Cheddar cheese
1 1/2 c. skim or low fat milk
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. chili powder (or more) to taste
Paprika

In large bowl, combine all ingredients except the paprika, and mix well. Pour the above into a greased 2-quart casserole. Sprinkle with paprika. Bake the casserole in a 350 degree oven for 40 to 50 minutes.
